Sparkling sake is part of the new sake revolution – a way to re-introduce sake to a younger market. Younger generations have previously dismissed sake as an out-dated beverage, but because many sake makers are passionate about revamping the traditional sake style, sake is starting to slowly come back in fashion.

Premium and sparkling sakes are created using modern production technologies, which produces a more refined-tasting tipple, best served cold. I have to admit, it makes a fun and refreshing change from the usual fizz at a dinner party or event. Delicious and decadent.

I first discovered Mio sparkling sake in Kyoto. In a little ramen shop, my sister and I were entranced by the beautiful composition of its poster. Look how pretty it is! It looks like a tipple from a Disney movie! “That looks fancy! Let’s try it”.

Mio Sparkling Sake from the Shochikubai Shirakabegura brewery

Mio Sparkling sake is born from the Shirakabegura brewery in Nada. Nada is famed for its crystal clear miyamizu water and is a popular location for sake makers. The high-quality miyamizu flows straight from the Rocco mountains. It’s hard-water elements contains a high mineral content to produce fresh, clean sake.


How do I drink sparkling sake?

Like champagne or any fizz, sparkling sake is best served chilled. I would also suggest forgoing the usual small sake cups (or ‘o-choko’). To really showcase the lively stream of bubbles, opt for a champagne flute or tulip.


Where can I buy Mio Sparkling Sake?

Ready to treat yourself to a little bubbly sake? You can buy Mio in the UK in selected Asian supermarkets, Marks & Spencer’s and some excellent Japanese restaurants. They have even supplied a handy list here, which is nice.


Tasting notes:

Appearance: Light yellow

Length: Medium

Body: Light

Aroma: Freshly whipped cream, pear and crisp pink lady apples

Taste (chilled): Oh my. This sake is sweeter than Bambi bringing in doughnuts to the office on a Monday. Subtle flavours of almond, marshmallow and lychee.

Pairing: Mio sparkling sake is probably too sweet to pair with anything other than a light dessert. However, it makes an excellent aperitif or to finish a meal. Or just enjoy a chilled glass on a warm Saturday afternoon. I’m not judging you.
